Cooking Steps

Dry and season

Take the rostbiff out of the fridge 20 minutes before cooking and pat it dry with paper towel. If it is not already tied, tie it with kitchen string at 3cm intervals so it holds an even shape. Rub with the oil, the mustard if using, the garlic and herbs, then season all over with the salt and pepper.

Preheat the air fryer

Heat the air fryer to 200C for 5 minutes. Check the roast fits in the basket with at least 2cm of space around it so the hot air can circulate.

Place the rostbiff in the basket and cook at 200C for 15 minutes, turning it over halfway, until browned all over.

Rest the beef

Move the rostbiff to a board, cover loosely with foil and rest for 15 minutes, during which the centre climbs 3 to 5C. Carefully pour the drippings from the air fryer drawer into a small saucepan. If you are cooking potatoes, toss them in a little oil and salt and air fry at 200C for 15 to 18 minutes while the beef rests, shaking the basket halfway.

Make a quick gravy

Add the butter to the drippings over medium heat, stir in the flour and cook for 1 minute. Gradually whisk in the stock and simmer for 3 to 4 minutes until thickened, then add any juices from the resting board and season to taste.
