What is rostbiff and what cut of beef is it?
Rostbiff is the whole rump with the rump cap (picanha) removed, sold as a clean centre piece of lean beef. The AUSMEAT cut description is rump centre. The name comes from Swedish for roast beef, and the cut is highly prized in European butchery for its strong beef flavour, low fat content, and versatility. It can be roasted whole, sliced into steaks, or cut into strips for stir fry.
How is rostbiff different to rump steak?
Rump steak is a portioned slice cut from the whole rump, which includes both the rostbiff and the rump cap. Rostbiff is the entire boneless rump centre, sold whole with the cap and excess fat removed. Buy rostbiff if you want to portion your own steaks at the thickness you like, or roast it whole. You pay significantly less per kilo than buying pre cut rump steaks.
How do I cook rostbiff without it going tough?
Rostbiff is a lean cut, so the rule is hot, fast, and pull early. For a whole roast, sear all sides, roast at 200C for 15 to 20 minutes per 500g, pull at 55C internal for medium rare, then rest 15 minutes. For steaks, sear 3 minutes each side and rest 5 minutes. Always slice against the grain, and never cook past medium or it will toughen up.

Yes. AMG rostbiff is 100% grass fed and grass finished. Cattle are raised on Victorian and Gippsland pastures from birth, never grain finished. What internal temperature should I cook rostbiff to?
Pull rostbiff from the heat at 52C to 54C for medium rare, which is where this lean cut is at its best. The internal temperature rises another 2 to 3 degrees during the rest, so always pull a few degrees below your target. Because there's almost no internal fat, cooking past medium dries it out, so a thermometer is essential.
How long does rostbiff last in the fridge and freezer?
Cryovac sealed AMG rostbiff lasts 5 to 7 days in the fridge below 4C. In the freezer at minus 18C or colder, it keeps for up to 12 months without losing texture or flavour. For the best result, defrost slowly in the fridge over 24 to 48 hours before cooking, and never refreeze once thawed.
