What is Roam tenderloin best used for?

It's the most tender cut on the animal so it suits fast hot cooking or low and slow whole roasting, but it's wasted in slow braises or stews where tougher cuts deliver more flavour. Save the brisket and chuck for those, and let the tenderloin do what it does best.
What is the difference between tenderloin and eye fillet?
They're the same cut. Tenderloin is the international name, eye fillet is the Australian butcher's term, and filet mignon refers to the individual medallions cut from the tenderloin. Whatever you call it, it's the long muscle that runs under the spine, the most tender on the entire animal.
What does MB2-3+ mean on a grass fed tenderloin?
MB2-3+ refers to the marble score on the AUS MEAT scale, which runs from 0 to 9 plus. Most grass fed eye fillet is very lean and scores low, so an MB2-3+ grade on a grass fed tenderloin is unusual. It means visible intramuscular marbling, which lifts the flavour and juiciness well beyond standard grass fed eye fillet.

How many steaks can I get from one tenderloin?
A 2kg whole tenderloin yields roughly 8 to 10 thick filet mignon medallions at around 200g each, depending on how you portion it. What internal temperature should I cook tenderloin to?
Pull tenderloin from the heat at 50C to 52C for rare or 52C to 54C for medium rare, which is where this cut shines. Because tenderloin is so lean, cooking past medium dries it out and wastes the cut.
