What is Australian Meat Group Tenderloin best used for?
Tenderloin shines as filet mignon steaks, whole roast centrepieces, beef Wellington, carpaccio, or thinly sliced for tartare. It's the most tender cut on the animal so it suits fast hot cooking or low and slow whole roasting, but it's wasted in slow braises or stews where tougher cuts deliver more flavour. Save the brisket and chuck for those, and let the tenderloin do what it does best.
How long does grass fed Angus tenderloin last in the fridge?
Unopened in its cryovac bag, the tenderloin keeps for up to 14 days in the fridge below 4C. Once opened, cook within 3 days for the best quality. If you're not cooking within that window, transfer straight to the freezer where it holds quality for up to 12 months.
What is the difference between tenderloin and eye fillet?
They're the same cut. Tenderloin is the international name, eye fillet is the Australian butcher's term, and filet mignon refers to the individual medallions cut from the tenderloin. Whatever you call it, it's the long muscle that runs under the spine, the most tender on the entire animal.
Is AMG beef genuinely grass fed Angus?
Yes. Australian Meat Group sources from accredited Angus producers running pasture raised cattle, finished on grass with no feedlot grain finishing. Every animal is traceable from farm to pack and raised without added hormones or routine antibiotics. The certification covers the full chain from farm through to final packaging.
How is the tenderloin delivered to my door?
Your order is cryovac sealed, packed into an insulated box with chilled gel packs, and dispatched Monday, Wednesday, and Friday via express courier. Cold chain is maintained the entire journey and you'll receive tracking from dispatch through to delivery. Meat arrives chilled and ready to refrigerate or freeze immediately.
How many people does a 2kg tenderloin feed?
A 2kg whole tenderloin yields roughly 8 to 10 thick filet mignon steaks at 200g each, or feeds 8 people as a whole roast centrepiece with sides. For a dinner party of 6 with generous portions, allow 250g per person. For a Christmas or special occasion roast feeding 10 to 12, the 2.2kg piece is the sweet spot.
What internal temperature should I cook tenderloin to?
Pull tenderloin from the heat at 50C to 52C for rare, 52C to 54C for medium rare (recommended), 55C to 58C for medium, or 60C plus for medium well. The internal temperature rises another 2 to 3 degrees during the rest, so always pull a few degrees below your target. Anything past 65C is overcooked and wastes the cut.
Can I freeze the tenderloin if I don't cook it straight away?
Yes, and it freezes beautifully thanks to the cryovac seal. Leave the meat in the original vacuum bag, store at minus 18C for up to 12 months, and defrost slowly in the fridge over 24 to 36 hours before cooking. Never defrost on the bench or in the microwave, the slow fridge thaw preserves the texture.

If you won't be home, we recommend a safe shaded drop spot, a neighbour, or rescheduling for a date you're available. Once the box arrives, refrigerate or freeze the meat within 2 hours for best quality.
